Super crunchy Thai pearl barley salad with the best asian flavours!

Ingredients
- 1 1/2 Cup Cooked Pearl Barley
- 1/4 Cup Peanuts
- 1/2 Cup Purple Cabbage finely chopped
- 1/2 Cup Carrots finely chopped
- 4 tbsp Lime & Sesame Dressing read notes for alternative

4 tbsp Scallions finely chopped
Instructions

Cook Pearl Barley as per package instructions and keep aside to cool down to room temperature. Transfer it to a large bowl and put in the refrigerator for about 20 mins.

Fluff up the pearl barley using a fork. Add the purple cabbage, carrots and peanuts.

Add the salad dressing and toss it until everything is just mixed.

Top with scallions and serve.
